Pulled Beef Sandwiches
Yield: enough for 24 hamburger buns
Bill’s Aunt Lorene gave me this recipe when I was a newlywed. Even people who dislike cabbage love this. Long simmering makes the cabbage disappear into the beef, creating great flavor and texture.
4 pounds cooked roast beef, shredded
9 cups shredded cabbage
2 cups ketchup
1, 15-ounce can beef broth
3/4 cup Worcestershire sauce
2 tablespoons lemon juice
1 tablespoon mustard
2 teaspoons salt or more to taste
- In a Dutch oven or large cooking pot, place shredded beef, cabbage, ketchup, beef broth, Worcestershire sauce, lemon juice, mustard, and salt.
- Cover and simmer over low heat 1 hour. Uncover and simmer 1 hour.
Plan ahead: Perfect for company – cook up to 3 days ahead and reheat when ready to serve. It’s a large recipe, but you will love having extra to share or reheat.
Freeze ahead: Place ingredients in freezer bag, either before or after simmering. Freeze up to 2 months.
